How long should dried porcini mushrooms be soaked?

Dried porcini mushrooms should be soaked for about 15–20 minutes in lukewarm water. During soaking, it is advisable to move them gently by hand to help remove any natural residues that may be present on the product.

Generally, a first quick soak is carried out and the water is discarded. The porcini mushrooms are then briefly soaked again in clean water: this second soaking water, carefully filtered, can be used when preparing sauces or risottos, as it is very aromatic.

How should dried porcini mushrooms be used in cooking?

After soaking, dried porcini mushrooms can be used in many preparations. They are suitable for risottos, pasta sauces, polenta, meat dishes and traditional recipes.

Briciolone comes from the same type of processing as the Speciale quality, but is made up of smaller pieces. It costs less because it does not have whole slices, while still retaining a good aroma and being very practical for everyday cooking.
